1 pint boxes of fresh strawberries, washed, drained and hulls removed
2 1/2 cup.(Make sure cups measure 8 ounces each.) of fresh pineapple, peeled and finely chopped
7 cups (8 ounces each) sugar
2 packages (1 3/4 oz) powdered pectin
1 cup cold water
4 pint freezer containers with lids
1- Place strawberries in a large mixing bowl.
2- Crush the strawberries with a potato masher.
3-Measure out 2 1/2 cups of strawberries and place in a separate bowl.
4-Add the pineapple to the strawberries.
5-Slowly add the sugar and stir until well combined.
6-Place the cold water in a saucepan over medium heat.
7-Add the pectin.
8-Stir continuously until water begins to boil.
Boil for 1 minute and remove from heat. Pour the water mixture in with the fruit.
Stir well to combine and continue stirring for 4 minutes. Pour into the pint freezer
containers and cover. Let stand at room temperature for 24 hours.
Freeze after 24 hours. The jam will stay good in the freezer for up to 6 months.To use,
remove from the freezer and allow it to come to room temperature for about 1 hour.
Cover and let refrigerate for up to 3 weeks.

It is made of a mixture of Plantains, ground beef and other great vegetable products. If you are a meat-lover, this is made for you in mind. Having a sweet and sour taste, this treat will be addictive and will have you begging for more. You can eat this with Puerto Rican rice and beans or solo. If you like the hot stuff, you can open the tip and carefully pour the sauce inside. As you bite on it, it will add a fiery taste. I have enclosed a picture of an alcapurria so that you can have an idea of what a small but tasty treat can do, but be careful, this treat can put a couple of extra pounds on you. This is my favorite meal. As a young kid living in New York City, My mom would cook us a meal of rice and beans. She would add some seasoning and I was ready to partake of a delicious meal. This meal can be excellent to eat along with some tomatoes, lettuce and avocado. Add some dressing of your choice and you got an outstanding meal. You can, also, eat it with chicken, steak (My favorite) or pork chops. Everyone in life has a favorite meal and this is one of them. I can eat this every day and not get tired. So, give yourself a treat and have some arroz y habichuelas (Rice and beans) and enjoy!

Sister Rolanda teaching the class some cooking tips
Rolanda's squash special
2 apples (Gala preferred)
Lemon Zest (1 tablespoon)
Dry sage (1/4 teaspoon)
Lemon Juice 1 teaspoon
Brown sugar 1/4 cup
Cinamon 1 tablespoon
Nutmeg---freshly ground. 1 teaspoon
Butter 4 tablespoon
Apple sauce--Unsweetened. 1 cup
All purpose flour 2 tablespoons
Preheat Oven at 400 degrees
Cut Squash horizontally and remove seeds.
Cut the ends on the squash so it will
sit upright like a bowl.
Place 1 tablespoon of butter in each half.
Core apples, peel if desired. (You can leave the
skins--if desired) Dice in 1 inch ice cubes
and toss with lemon juice in a bowl.
Add zest and seasonings to apples and mix.
Divide evenly to each half. Bake for 1 hour
and 30 minutes.

Grilled Curry Chicken
Slice each length wise to make four fillets
Pound fillets w/mallet between plastic wraps
1 tablespoon of curry
1 teaspoon of sea salt
1/2 teaspoon of garlic powder
1/2 teaspoon of onion powder
1/4 top ground black pepper
1/4 teaspoon of cinnamon
1/4 teaspoon ginger(Ground)
Mix seasonings until combined. (Place in empty bowl)
Sprinkle seasonings on each fillet about a teaspoon
Oil or spray pan or grille
Cook on both sides about 3 minutes.
